So many people say they can't go vegan because they'd miss cheese so much. Am I the only person who was never fussed about it in the first place? Even if it's a nice tasting cheese, I just could never get over the aftertaste. Almost like I could taste the insides of a cow. Well, you won't taste the insides of a cow with this recipe. A cheesy sauce made with cashews and lemon juice, without any oil, will satisfy your cravings for cheese and then some. Add to that some gluten-free pasta, and you can enjoy all the flavour with none of the adverse affects of a regular mac and cheese!
